Fermented Finger Millet
We were also equally shocked to this name for Ragi Koozh. Wondering what is this? This is a South Indian summer special. This cooling drink is free. We mean diabetic free, gluten free and its health as well. Come let's prepare a fresh batch and gulp it and flaunt our cool selves.
Total Preparation time - 15 - 20 mins - Serves 2
Requirements:
Ragi Flour - 1cup
Water - 2cups
Salt - As per taste
Sambar Onion - 2 (chopped)
Green Chilli - 1 (chopped)
Curry leaves - 1spring
Raw Green Mango - 2 slices (with salt and chilli powder)
Curd/Buttermilk
How to Brew?
- Take a pan and pour water into it and salt to it. Let it boil.
- While the water is heating slowly add the ragi flour little by little without lumps.
- Continuously stir it for about 10 minutes. Bring it down the stove.
- Slowly turn the mixture into round shapes like balls and let them soak in water for about 2 - 4 hours.
- Pick a bowl, transfer the ragi bowls into the bowl and add curd or buttermilk to it.
- Add a pinch of salt and add little water to the curd so the consistency is semi solid.
- Now add the chopped onions, chillies and curry leaves and mix it well and carefully.
- Serve it immediately along with raw mango pieces.
